If you want to have a balanced diet, here is a recipe that you can easily do. All you need is 15 minutes for your prepping time, and it doesn’t require you to cook at all. This is an apple pesto, which gives a twist to the classic pesto so that you can have apples in your diet.

Ingredients you’ll need:

  • Fresh parsley leaves (1 cup)
  • Cleaned and dried fresh basil leaves (1 ½ cup)
  • Chopped and cored apple (1 cup)
  • Apple cider (1 tablespoon)
  • Blanched and salted almonds (1/4 cup)
  • Fresh lemon juice (1 teaspoon)
  • Salt (1/2 teaspoon)
  • Freshly grated lemon zest (1 teaspoon)
  • Fresh sliced apples
  • Olive or vegetable oil (3 tablespoons)
  • Cheeses (Blue, Brie, Cheddar)
  • Assorted Crackers

Directions:

  1. Place all your pesto ingredients in a blender or food processor, except the vegetable oil.
  2. Process everything on high speed until all your ingredients are mixed all together.
  3. While your ingredients are still processing, add your vegetable oil one tablespoon at a time. Continue this for 1 to 2 minutes until the texture is smooth.
  4. When finished, place your mixed pesto in a bowl. You have the choice to add softened cheeses on top or add your favourite crackers and apples.
  5. If there are leftovers, cover the bowl and put it inside the fridge.
